I’ve written before about my troubles getting my son Miles to eat vegtables. But it seems that now scientists are going to take care of that problem for me….
According to an article in this week’s New York Times, scientists are hard at work finding new ways to add more nutritional value to otherwise unhealthy foods — eg, potato chips may someday be a good source of dietary fiber.
I guess I should feel good about this. After my rant at the folks at Legoland for serving up deep friend “apple fries” and unhealthy lunches, I guess I should feel good about the fact that corporate America is looking to put some nutrition back into the American diet. It would certainly be easier for all of us if my kids could meet all of their nutritional needs with mac & cheese and veggie booty.
But in a way it is also enabling people to continue to eat foods that aren’t inherently good for them, without having little twinges of guilt. And if my kids don’t have to eat anything except mac & cheese and booty, in the long run they’ll be the losers.
